Taralli are crispy, ring-shaped Italian biscuits that are made with olive oil, wine, and flour. They can be sweet, dusted in sugar or savoury and flavoured with fennel seeds, black pepper, or chili. They can be made with red, white or rosato wine. In this hands-on lesson we will be making a sweet version using red wine and sugar and savoury taralli with fennel seed, Sambuca and white wine.

Taralli are ubiquitous in southern Italy, the perfect accompaniment to any aperitivo (savoury ones) or dunked into a coffee or a digestivo (sweet ones) at the end of the meal. And while these crunchy biscuits can be found in most Italian delis and these imported versions are quite good, homemade taralli are so much better AND they are easy to make.
