upcoming online classes

We are pleased to offer a newly updated selection of online cooking classes just in time for the winter season. Our hands-on lessons are a terrific way to learn some new cooking skills with a small, online group of participants from around the world.

Here are the classes that we are offering:

Egg Pasta 101 - is our introduction to egg and soft flour pasta dough. We will mix the dough by hand and then use a pasta machine to stretch the dough into sheets that can be used for lasagna, pappardelle, ravioli, tortellini and a myriad of other pasta shapes. During the class we will also make a ricotta and chard filling and hand-form stuffed pasta shapes that will be simply cooked and sauced with brown butter and herbs, topped with a showering of Parmigiano.

Semola Pasta and Sugo 101 is an introduction to making semola pasta by hand which we will form into orecchiette, cavatelli and other shapes and pair with a simple, yet delicious tomato sauce..

Ricotta Gnocchi 101 includes instruction on how to make fresh ricotta at home in addition to making pillowy gnocchi. We will pair the gnocchi with a seasonal sauce and discuss techniques for making gnocchi ahead for easy winter entertaining.

Italian Sunday Lunch is a ongoing series that will be offered once a month and features a three course menu class with tried and true recipes that are inspired by the seasons and the culinary traditions of Puglia. A great way to spend a few hours learning new dishes and creating a small feast to be served in your home to the people you love.

We are also hosting, by request, sourdough bread making sessions for those would like an in-depth tutorial to learn, from scratch, the art of sourdough bread making or to delve deeper into your sourdough practice for more seasoned bakers. Full details here.

Olive Oil Desserts, Mushroom Lasagna 101, and Sweet and Savoury Taralli will be offered by request.
