A well made lasagna is a thing of beauty. Layers of silky egg pasta sauced with rich and creamy béchamel, plenty of mushrooms scented with thyme and shallots and topped with a showering of good Parmigiano Reggiano cheese. Parma ham is optional.
Unlike other versions of this classic Italian dish the lasagna we will make in this class is elegant and restrained with fine, thin layers of pasta and a minimum of cheese to allow the earthy funghi, (both dried porcini and fresh oyster mushrooms), to shine. A technique-focused introduction to egg-pasta making, from hand mixing the dough, to kneading and then rolling out thin sheets that are easily cut into rectangles for the lasagna.
A pasta machine is recommended for this class in order to roll out the lasagna sheets.

Duration: Class time is approximately 3 hours.
Fee: $80 CND - your bank or PayPal will automatically convert your country’s currency to Canadian dollars or Euros for you based on current conversion.
Class Size: Our small group, hands-on classes, are limited to 8 participants.
Classes will take place on ZOOM and you will receive a meeting invitation the day before the class.
An ingredient + equipment list will be emailed to you 4 days before the class and printable recipes will be emailed at the class conclusion.
